Assali Hulling and Shelling is owned and operated by Dominic and Nicole Assali. Upon graduating from Cal Poly SLO in 2014 Dominic began a more hands on role in the huller and sheller operations. Then in 2019 Dominic and Nicole were given the opportunity to purchase the business from Dominic’s grandparents Frank and Marie Assali, who started the business in 1979. Dominic’s love for design and fabrication led to the expansion and modernization of the hulling and shelling lines, with the goal of providing each grower with the highest quality of almond meats and inshell grades. Our operations have grown and as a result we have aligned our business with those that share our common core values, integrity, quality, innovation and efficiencies.
